  • 8 oz rice noodles
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red or yellow curry paste
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 2 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice

Instructions

  1. 1. Cook rice noodles according to package instructions until tender but firm. Drain and set aside.
  2. 2. In a large skillet, heat oil over medium heat. Sauté bell peppers, broccoli, and carrots until slightly softened.
  3. 3. Add minced garlic and grated ginger; cook for one minute until fragrant.
  4. 4. Pour in coconut milk and stir in curry paste until well mixed.
  5. 5. Add cooked noodles to the skillet; toss gently to coat in sauce. If too thick, add water or broth as needed.
  6. 6. Stir in soy sauce and lime juice; taste and adjust seasoning.
