  • 2 cups fresh corn (off the cob or frozen)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 medium Yukon Gold potatoes, cubed (about 2 cups)
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Sauté onions and garlic in melted butter over medium heat until soft, about 3-5 minutes.
  2. Add chicken breasts and chicken broth; bring to a gentle boil. Reduce heat and simmer for 15 minutes until chicken is cooked through.
