  • 8 oz pasta (spaghetti, penne, or gluten-free)
  • 3 medium fresh beets (about 12 oz)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast for about an hour until tender. Let cool slightly before peeling.
  2. While the beets roast, boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about one minute).
  4. Chop the roasted beets into chunks and blend them with sautéed garlic, heavy cream, lemon juice, salt, and pepper until smooth.
  5. Return the beet mixture to the skillet over low heat and toss in the cooked pasta until evenly coated.
