  • 3 lbs Beef Chuck Roast
  • 1 cup Unsweetened Cranberry Sauce
  • 2 medium Yellow Onions, chopped
  • 4 cloves Garlic, minced
  • 2 cups Low-Sodium Beef Broth
  • 2 tsp Fresh Thyme (or 1 tsp dried)
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef chuck roast generously with salt and pepper. In a large oven-safe pot or Dutch oven, heat oil over medium-high heat and sear the roast on all sides until browned (about 3-4 minutes per side). Remove from pot.
  3. Add chopped onions and minced garlic to the pot; sauté until softened (about 5 minutes).
  4. Return the beef to the pot, then pour in cranberry sauce and beef broth. Stir in fresh thyme.
  5. Cover tightly and transfer to the oven. Cook for about 3 hours, or until the beef is fork-tender.
  6. Let rest for 10 minutes before slicing; serve garnished with fresh parsley.
