Description

Cranberry Crumble Cheesecake Bars are a delightful fusion of creamy cheesecake and tart cranberries, topped with a crunchy crumble. Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1/4 cup sour cream
  • 3 large eggs
  • 2 cups fresh cranberries (or frozen)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs with melted butter; press into the bottom of the baking dish. Bake for 10 minutes until golden brown.
  3. Beat softened cream cheese until smooth. Add sugar and vanilla; mix well. Incorporate sour cream and eggs one at a time until fully blended.
  4. Toss cranberries in sugar and gently fold into the cheesecake mixture.
  5. Pour filling over the crust and bake for 35-40 minutes until slightly jiggly in the center.
  6. Allow to cool at room temperature before chilling in the fridge for at least two hours. Cut into squares and enjoy.
