Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs with melted butter; press into the bottom of the baking dish. Bake for 10 minutes until golden brown.
- Beat softened cream cheese until smooth. Add sugar and vanilla; mix well. Incorporate sour cream and eggs one at a time until fully blended.
- Toss cranberries in sugar and gently fold into the cheesecake mixture.
- Pour filling over the crust and bake for 35-40 minutes until slightly jiggly in the center.
- Allow to cool at room temperature before chilling in the fridge for at least two hours. Cut into squares and enjoy.
