  • 1/4 cup sugar (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan over medium heat, whisk together coconut milk and sugar until dissolved. Simmer gently.
  2. In a small bowl, sprinkle gelatin over 1/4 cup cold water and let sit for 5 minutes to bloom.
  3. Once the coconut milk mixture is warm (not boiling), remove from heat and stir in the bloomed gelatin until fully dissolved.
  4. Fold in mango puree and vanilla extract until well combined.
