  • 1 lb ground meat (beef, chicken, or turkey)
  • 1/2 cup breadcrumbs (preferably panko)
  • 3 garlic cloves, minced
  • 1 inch fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup low-sodium vegetable broth
  • 2 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix ground meat with breadcrumbs, garlic, ginger, and curry powder until combined.
  2. Roll the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  3. Heat oil in a skillet over medium heat and sear meatballs until browned (6-8 minutes).
  4. Remove meatballs and add coconut milk and vegetable broth to the skillet; scrape up brown bits from the bottom.
  5. Stir in more curry powder if desired, then return meatballs to the skillet.
  6. Simmer for 15 minutes to meld flavors. Squeeze lime juice over meatballs and garnish with cilantro before serving.
