Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • Zest of 1 orange and 1 lemon
  • ½ cup fresh orange juice
  • ¾ cup extra virgin olive oil
  • 3 large eggs, room temperature
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil or butter, then line with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In a large mixing bowl, combine the orange zest, lemon zest, orange juice, and olive oil; stir until blended.
  4. Add the eggs one at a time while mixing continuously. Then mix in sour cream and vanilla extract until smooth.
  5. Gradually fold in the dry ingredients using a spatula until just combined—do not overmix.
  6. Pour the batter into the prepared pan and level it out evenly. Bake for 30–35 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
