  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1 cup dark chocolate chips
  • 1/2 cup crushed candy canes for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter with granulated and powdered sugars until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in peppermint extract until combined.
  5. Gradually mix the dry ingredients into the wet mixture until just blended.
  6. Scoop tablespoon-sized portions of dough onto prepared sheets, spaced two inches apart. Bake for 10-12 minutes until edges are lightly golden but centers remain soft. Cool on the sheets for five minutes before transferring to wire racks.
  7. Melt dark chocolate chips in a microwave-safe bowl. Dip half of each cooled cookie into melted chocolate and sprinkle with crushed candy canes on top. Allow to set on parchment paper.
