  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 tsp fresh thyme or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat and add olive oil.
  2. Season chicken breasts with salt and pepper. Cook in the hot skillet for about 6 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add onions and garlic; sauté until translucent (about 2 minutes).
  4. Add sliced mushrooms and cook until browned (about 5 minutes).
  5. Pour in chicken broth and soy sauce, scraping any bits from the bottom of the pan. Simmer for about 5 minutes.
  6. Return the chicken to the skillet, coating it with the sauce for an additional few minutes until heated through.
