- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 3 garlic cloves (minced)
- 8 lasagna noodles (traditional or no-boil)
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 cups marinara sauce
Instructions
- Preheat the oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente, then drain and set aside.
- In a skillet over medium heat, heat olive oil. Season chicken with salt and pepper; cook for about 6 minutes per side until golden brown and cooked through. Shred the chicken once cooled.
- In the same skillet, add minced garlic and spinach; sauté until wilted (about 3 minutes).
- In a bowl, combine shredded chicken, sautéed spinach, ricotta cheese, half of the mozzarella cheese, and Parmesan cheese; mix well.
- Spread some marinara sauce at the bottom of a baking dish. Spoon filling onto one end of each noodle, roll tightly, and place seam-side down in the dish.
- Top each roll-up with remaining marinara sauce and mozzarella cheese. Cover with foil and bake for about 25 minutes until heated through; uncover for the last 5 minutes to achieve a golden-brown topping.
