Description

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves (minced)
  • 8 lasagna noodles (traditional or no-boil)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente, then drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt and pepper; cook for about 6 minutes per side until golden brown and cooked through. Shred the chicken once cooled.
  3. In the same skillet, add minced garlic and spinach; sauté until wilted (about 3 minutes).
  4. In a bowl, combine shredded chicken, sautéed spinach, ricotta cheese, half of the mozzarella cheese, and Parmesan cheese; mix well.
  5. Spread some marinara sauce at the bottom of a baking dish. Spoon filling onto one end of each noodle, roll tightly, and place seam-side down in the dish.
  6. Top each roll-up with remaining marinara sauce and mozzarella cheese. Cover with foil and bake for about 25 minutes until heated through; uncover for the last 5 minutes to achieve a golden-brown topping.
