  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 sheet puff pastry (thawed)
  • 2 cups fresh spinach (chopped)
  • 4 oz cream cheese (softened)
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • ¼ cup sour cream
  • ½ cup low-sodium chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté spinach in olive oil over medium heat for about 3 minutes until wilted.
  3. In a bowl, mix sautéed spinach, cream cheese, parmesan, garlic powder, salt, and pepper until smooth.
  4. Roll out puff pastry on a floured surface and cut into squares.
  5. Place two tablespoons of filling on each square, fold diagonally, and seal edges with a fork.

  7. For the sauce, combine sour cream and chicken broth in a saucepan over medium heat until warmed; stir in parmesan until melted.
