  • 2 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese
  • ¾ cup Italian breadcrumbs
  • ¼ cup fresh parsley, chopped
  • 4 tbsp butter
  • ¼ cup freshly squeezed lemon juice
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). In a large bowl, mix ground chicken, minced garlic, breadcrumbs, Parmesan cheese, parsley, salt, and pepper until just combined.
  2. 2. Form mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
