  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup hummus (any flavor)
  • 4 whole wheat or spinach tortillas
  • 2 cups fresh vegetables (lettuce, tomatoes, cucumbers, bell peppers)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat grill or stovetop grill pan over medium-high heat.
  2. In a bowl, mix minced garlic with salt, pepper, and a drizzle of olive oil. Rub this mixture on chicken breasts.
  3. Grill chicken for about 6-8 minutes per side until the internal temperature reaches 165°F (75°C).
  4. While the chicken grills, chop fresh vegetables into bite-sized pieces and prepare hummus.
  5. Allow cooked chicken to rest for five minutes before slicing into strips.
  6. Spread hummus on each tortilla and top with sliced chicken and fresh veggies.
