- 2 cloves fresh garlic, minced
- 8 flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 1 cup full-fat sour cream
- 2 cups low-sodium chicken broth
- 4 green onions, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper, then bake for 25-30 minutes until cooked through. Let cool and shred.
- In a bowl, combine shredded chicken with spices and half of the cheese.
- In a saucepan over medium heat, melt butter, sauté garlic until fragrant. Add flour to make a roux; slowly whisk in chicken broth and sour cream until smooth.
