  • 2 cloves fresh garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 6 large flour tortillas
  • 1 cup shredded cheddar cheese
  • ½ cup vegetable oil (for frying)
  • Optional: sour cream and salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt and pepper, place on a lined baking sheet, and bake for about 25 minutes until cooked through.
  2. Shred the chicken using two forks. In a bowl, combine the shredded chicken with minced garlic, cumin, and chili powder.
  3. Lay out the tortillas and fill each with the chicken mixture and shredded cheese. Fold in the sides and roll tightly.
  4. Heat vegetable oil in a skillet over medium heat. Fry chimichangas seam-side down until golden brown, about 3 minutes per side.
