Description

  • 1 package (8 oz) phyllo dough, thawed
  • 2 cups fresh cherries, pitted and halved
  • 1/4 cup granulated sugar (adjust to taste)
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup heavy cream
  • 1/4 cup unsalted butter, melted
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Unroll phyllo dough and lay out two sheets on a clean surface. Brush melted butter between each layer.
  3. Cut the layered phyllo into squares (4×4 inches). Place squares in greased muffin tins to form cups.
  4. Bake for 12-15 minutes until golden brown and crisp.
  5. In a bowl, whip together heavy cream, sugar, vanilla extract, and lemon juice until soft peaks form.
  6. Toss cherries with additional sugar in another bowl.
  7. Once phyllo cups have cooled slightly, fill them with lemon cream and top with cherries.
