Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and lemon zest.
- In another bowl, mix ricotta cheese, eggs, milk, and melted butter until smooth.
- Fold the wet mixture into the dry ingredients until just combined; be careful not to overmix.
- Gently fold in the chopped cherries.
- Heat a non-stick skillet over medium heat and grease lightly with butter.
- Pour about 1/4 cup of batter onto the skillet; cook until bubbles form (about 3 minutes), then flip and cook until golden brown (1-2 minutes).
- Serve warm with maple syrup.
