  • 3 medium Russet potatoes (about 600g), diced
  • 2 tbsp extra virgin olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese (about 120g)
  • 2 green onions, chopped
  • Sour cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Rinse diced potatoes under cold water to remove excess starch. Dry thoroughly.
  3. In a large bowl, toss the potatoes with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  4. Spread the seasoned potatoes on the prepared baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through until golden brown and crispy.
  5. Sprinkle shredded cheddar over the roasted potatoes and return to the oven for an additional 5 minutes until melted.
  6. Remove from the oven and garnish with chopped green onions. Serve hot with sour cream on the side.
