- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups cauliflower rice (fresh or frozen)
- 1 cup long-grain white rice (uncooked)
- 2 cups shredded cheese (cheddar and mozzarella blend)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook diced chicken until golden brown and cooked through, about 7-10 minutes.
