  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 cups cooked rice
  • 2 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 cup low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a large skillet over medium heat, add oil and sauté the chicken until golden brown (about 5 minutes per side).
  3. In a bowl, whisk together soy sauce, chicken broth, and minced garlic.
  4. Layer cooked rice in the baking dish and place the browned chicken on top. Pour the sauce over everything.
  5. Cover with foil and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C). Remove foil, sprinkle cheeses on top, and bake uncovered for an additional 5 minutes until melted.
