  • 1 lb lean ground beef
  • 1 cup shredded sharp cheddar cheese
  • 12 eggroll wrappers
  • 1 medium yellow onion, diced
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 cups vegetable oil (for frying)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium-high heat, cook the ground beef and diced onion until browned. Drain excess fat.
  2. Stir in cheddar cheese, ketchup, and mustard until melted together.
  3. Lay eggroll wrappers out in a diamond shape. Place about 2 tablespoons of the beef mixture at the bottom corner.
  4. Fold the bottom corner over the filling, tuck in the sides, and roll tightly.
  5. Heat oil in a deep pan until shimmering. Fry eggrolls until golden brown on all sides (about 3-4 minutes per side). Drain on paper towels.
  6. Serve hot with extra ketchup or mustard for dipping.
