  • 1 cup ricotta cheese

  • 1 egg yolk (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface to about 1/8 inch thick; cut into circles using a large cutter.
  3. In a bowl, mix feta, ricotta, parsley, salt, and pepper until combined.
  4. Place 1 tablespoon of filling onto each pastry circle; fold in half and seal the edges securely.
  5. Brush each pastry with egg yolk and place on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes until golden brown.
