Ingredients

  • 1 medium head cauliflower (about 600g), cut into florets
  • 4 tbsp tahini
  • 2 tbsp freshly squeezed lemon juice
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash cauliflower florets and place them in a large bowl.
  3. In a separate bowl, whisk together tahini, lemon juice, garlic, olive oil, salt, and pepper until smooth.
  4. Coat cauliflower with half of the tahini sauce in the bowl or a zip-top bag until well-covered.
  5. Spread cauliflower evenly on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown and tender.
  6. Drizzle remaining tahini sauce over the roasted cauliflower and garnish with chopped parsley before serving.
