  • 12 oz spaghetti
  • 4 oz pancetta or guanciale, diced
  • 2 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • Salt, to taste (about 1/2 tsp)

Instructions

  1. Boil a large pot of salted water and cook the spaghetti until al dente according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, cook the pancetta until crispy. Remove from heat.
  3. Whisk together eggs and grated Parmesan in a bowl; add black pepper.
  4. Add drained pasta to the skillet with pancetta and mix well.
  5. Quickly pour the egg mixture over the hot pasta while tossing continuously to create a creamy sauce. Use reserved pasta water as needed to adjust consistency.
  6. Season with salt if necessary and serve immediately.
