  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup cocoa powder
  • 2 tbsp instant coffee granules
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, instant coffee granules, and salt.
  5. Gradually combine the dry ingredients with the wet mixture until just mixed; do not over-mix.
  6. Fold in the chocolate chips.
  7. Drop rounded balls of dough onto ungreased baking sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes until edges are set but centers remain soft. Cool slightly before transferring to wire racks.
