- 3 medium carrots, chopped
- 3 stalks celery, chopped
- 4 medium Yukon Gold potatoes, diced
- 1 ear corn on the cob, cut into chunks

- 3 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
- 8 cups water
Instructions
- Heat a large pot over medium heat and add a splash of oil. Sear the beef shank until browned on all sides (5-7 minutes).
- Add the chopped onion and minced garlic; sauté until fragrant and translucent (3-4 minutes).
- Pour in enough water to cover the beef (about 8 cups) and bring to a boil. Reduce heat and add carrots, potatoes, celery, and corn; simmer for about one hour.
- Season with salt and pepper to taste; add fresh cilantro for extra zest.
- Continue cooking for another hour until the beef is tender and easily falls off the bone.
- Serve hot in bowls with broth ladled generously over the meat and vegetables; garnish with additional cilantro.
