Description

Cajun chicken and rice is a vibrant, flavor-packed dish that embodies the essence of Louisiana cuisine.


Ingredients

  • 3 boneless, skinless chicken breasts (1.5 lbs)
  • 2 tsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium yellow onion, diced
  • 1 cup long grain rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Dice the bell peppers and onion; mince the garlic.
  2. Season chicken breasts with olive oil and Cajun seasoning.
  3. Sauté the chicken in a skillet over medium-high heat for about 6 minutes per side until golden brown. Set aside.
  4. In the same skillet, sauté onions and bell peppers for about 5 minutes; add garlic towards the end.
  5. Return chicken to the skillet with rice and pour in chicken broth and soy sauce. Stir to combine.
  6. Cover and simmer on low heat for about 20 minutes until rice is tender.
