- 3 boneless, skinless chicken breasts (1.5 lbs)
- 2 tsp olive oil
- 4 cloves fresh garlic, minced
- 1 tbsp Cajun seasoning
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium yellow onion, diced
- 1 cup long grain rice
- 2 cups low-sodium chicken broth
- 2 tbsp low-sodium soy sauce
Instructions
- Dice the bell peppers and onion; mince the garlic.
- Season chicken breasts with olive oil and Cajun seasoning.
- Sauté the chicken in a skillet over medium-high heat for about 6 minutes per side until golden brown. Set aside.
- In the same skillet, sauté onions and bell peppers for about 5 minutes; add garlic towards the end.
- Return chicken to the skillet with rice and pour in chicken broth and soy sauce. Stir to combine.
- Cover and simmer on low heat for about 20 minutes until rice is tender.
