  • 8 oz fresh burrata cheese
  • 1 baguette or ciabatta bread (about 12 inches)
  • 2 cups ripe heirloom tomatoes, diced
  • 1 cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette or ciabatta into 1-inch thick slices and arrange them on a baking sheet. Toast for 8-10 minutes until golden brown.
  2. While the bread is toasting, combine diced tomatoes, torn basil leaves, and 2 tablespoons of olive oil in a mixing bowl. Season with salt and let sit for 5 minutes.
  3. Once bread is toasted, top each slice with the tomato mixture followed by generous pieces of burrata.
  4. Drizzle balsamic glaze over each bruschetta and sprinkle with salt and pepper before serving.
