  • 1 lb boneless, skinless chicken breasts
  • 3 cloves fresh garlic
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup Buffalo sauce
  • 4 tbsp butter (for sauce)
  • 2 tbsp honey (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a food processor, pulse the chicken and garlic until finely chopped.
  3. In a bowl, combine the processed chicken with panko breadcrumbs and eggs. Season with salt and pepper to taste.
  4. Form the mixture into golf ball-sized meatballs and place them in the prepared baking dish.
  5. Bake for 20-25 minutes until they reach an internal temperature of 165°F (74°C).
  6. Meanwhile, melt butter in a saucepan over medium heat, then stir in honey and Buffalo sauce until well combined.
  7. Drizzle the sauce over baked meatballs before serving.
