  • 8 oz flat rice noodles
  • 3 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 2 tbsp sriracha sauce (adjust to taste)
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup bean sprouts
  • 2 eggs, beaten
  • ½ cup roasted peanuts, crushed
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Soak the rice noodles in hot water for about 10 minutes until tender. Drain well.
  2. In a bowl, mix tamarind paste, fish sauce, brown sugar, and sriracha sauce until smooth.
  3. Heat oil in a large skillet over medium heat and sauté the bell peppers and carrots for about 5 minutes until softened.
  4. Add the drained noodles and sauce to the skillet; stir-fry for 3-4 minutes until well combined.
  5. Preheat your broiler to high; transfer the noodle mixture to a baking sheet and broil for several minutes until slightly crispy on top.
  6. Remove from oven, quickly toss with beaten eggs, then garnish with crushed peanuts, lime juice, and cilantro before serving.
