Ingredients

  • 1 cup finely chopped broccoli (fresh or frozen)
  • 1 cup cooked quinoa
  • 2 large eggs
  • 1 cup breadcrumbs (whole wheat or gluten-free)
  • 1/2 cup grated cheese (optional, cheddar or feta recommended)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until fluffy.
  2. Steam broccoli until bright green and tender (about 5 minutes). Let cool slightly.
  3. In a large bowl, combine cooked quinoa, steamed broccoli, beaten eggs, breadcrumbs, garlic powder, salt, pepper, and cheese (if using). Mix until well combined.
  4. Form mixture into small patties (about 3 inches wide) and place on a parchment-lined baking sheet.
  5. Heat olive oil in a skillet over medium heat. Fry patties in batches for about 3-4 minutes per side until golden brown.
  6. Transfer cooked patties to paper towels to drain excess oil before serving.
