  • 4 large eggs
  • 1 cup shredded cheddar and Monterey Jack cheese blend
  • ½ cup diced bell peppers (mixed colors)
  • ¼ small onion, diced
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients: Chop bell peppers and onion; whisk together eggs with salt and pepper.
  2. Sauté the veggies: Heat olive oil in a skillet over medium heat. Add onions and bell peppers, cooking until tender (about 5 minutes).
  3. Scramble the eggs: Pour whisked eggs over veggies in the skillet. Stir gently until just set but still creamy (about 3 minutes).
