  • 1 cup cherry tomatoes, halved
  • 1 cup diced bell peppers (any color)
  • 1/2 cup diced onion
  • 1/2 cup feta cheese or cheddar cheese, crumbled
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté diced onions and bell peppers until tender, about 5 minutes.
  3. Add spinach and cook until wilted—around 2 minutes—then stir in cherry tomatoes.
  4. In a bowl, whisk together the eggs with salt and pepper until fluffy. Pour the egg mixture over sautéed vegetables.
  5. Sprinkle cheese on top and cook on the stovetop for about 3-4 minutes until edges start to set.
