  • 6 large eggs
  • 1 cup cooked breakfast sausage (crumbled)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup bell peppers (chopped)
  • 1/2 cup onions (chopped)
  • Salsa (for topping)
  • Sour cream (for topping)

Instructions

  1. Gather your ingredients and chop the bell peppers and onions.
  2. In a bowl, whisk together the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and scramble the eggs until fluffy, about 3-4 minutes.
  3. In another skillet, cook the sausage over medium heat until browned, approximately 5-7 minutes. Add the chopped bell peppers and onions during the last two minutes of cooking.
  4. Lay a tortilla flat on a plate, then add scrambled eggs, sausage mixture, and shredded cheese to the center.
  5. Fold in both sides of the tortilla, then roll tightly from top to bottom to secure the filling.
