  • 3 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan to form the crust.
  3. Beat cream cheese until smooth; gradually add sugar, then mix in sour cream and vanilla extract.
  4. Add eggs one at a time, mixing gently; fold in half the blueberries.
  5. Pour filling over crust and top with remaining blueberries. Bake for 55–60 minutes until edges are set but center is slightly jiggly.
  6. Prepare topping by mixing flour, brown sugar, cinnamon, and cold butter until crumbly; sprinkle on top before cooling cheesecake for at least 4 hours in the fridge.
