  • 2 medium fresh beets, peeled and diced
  • 1 medium onion, finely chopped
  • 4 cups low-sodium vegetable broth (heated)
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by washing and peeling beets. Dice them into small cubes.
  2. In a large pan over medium heat, add olive oil and sauté the chopped onion until translucent (about 5 minutes).
  3. Stir in Arborio rice, toasting for about 2 minutes until slightly coated in oil.
  4. Gradually add heated vegetable broth one ladle at a time, stirring continuously until absorbed.
  5. Mix in diced beets after adding half the broth; continue stirring for about 10 minutes until beets soften.
  6. Remove from heat and stir in butter and Parmesan cheese until melted.
