Description

Black Bean Sweet Potato Veggie Burgers are a delightful vegan option that combines the rich flavors of black beans and sweet potatoes into satisfying patties. Ingredients

  • 2 medium sweet potatoes (about 300g)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup quick oats
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Bake on a baking sheet for about 45 minutes until tender.
  2. While the sweet potatoes bake, mash the black beans in a large mixing bowl.
  3. Once cooled, scoop out the sweet potato flesh into the bowl with the black beans. Add oats, red onion, garlic, cumin, salt, and pepper; mix until combined.
  4. Form mixture into patties (about five or six) roughly half an inch thick.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook patties for about four minutes per side until golden brown and crispy.
  6. Serve on buns or lettuce wraps with your favorite toppings.
