- 3 lbs chuck roast
- 4 guajillo chiles (deseeded)
- 1 large onion (divided)
- 5 garlic cloves
- 1 tsp cumin
- 1 tbsp dried oregano (preferably Mexican)
- 12 small corn tortillas
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- 1. Prepare the chiles: Remove stems and seeds from guajillo chiles. Toast in a dry skillet over medium heat for about 2 minutes until fragrant.
- 2. Make the marinade: Blend toasted chiles with garlic, cumin, oregano, half an onion, and 2 cups beef broth until smooth.
- 3. Marinate the meat: Coat chuck roast with marinade and refrigerate for at least 2 hours or overnight.
- 4. Cook the meat: Preheat oven to 300°F (150°C). Sear marinated chuck roast on both sides in a Dutch oven for about 5 minutes each side. Add remaining onion slices, leftover marinade, and another 2 cups beef broth. Cover and braise in the oven for approximately 3 hours until tender.
- 5. Shred and serve: Let meat cool slightly before shredding with forks. Serve on corn tortillas topped with cilantro and lime juice.
