  • 2 medium fresh beets (about 300g)
  • 100g creamy goat cheese
  • 4 cups mixed greens (arugula, spinach, kale)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp honey
  • Salt and pepper to taste
  • 30g walnuts or pecans, toasted

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap cleaned beets in aluminum foil and roast for about 45 minutes until tender.
  2. Allow the beets to cool for 10 minutes before peeling. Slice into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.
  4. In a large bowl, combine sliced beets with mixed greens and crumbled goat cheese. Drizzle with dressing and toss gently.
