  • 1 lb lean ground beef
  • 1 medium zucchini, finely chopped
  • 1 cup sliced mushrooms
  • 9 no-boil lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef. Drain excess fat and add minced garlic; cook for about 1 minute until fragrant.
  3. Stir in zucchini and mushrooms; cook for 5 minutes until tender.
  4. Add marinara sauce and simmer on low for about 10 minutes.
  5. In a baking dish, layer meat sauce, noodles, ricotta mixture (seasoned with herbs), and repeat until all ingredients are used, finishing with mozzarella on top.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10 minutes until bubbly and golden.
