  • 2 large sweet potatoes (about 1 lb), cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes.
