Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup barbecue sauce (your favorite brand)
- 2 large sweet potatoes (about 1 lb), cubed
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions
- Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes.
- Drizzle olive oil over the chicken breasts and coat them generously with barbecue sauce. Let marinate for at least 30 minutes.
- Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown and fork-tender.
- In a skillet over medium-high heat, cook marinated chicken breasts for about 6-7 minutes per side until they reach an internal temperature of 165°F (74°C).
- Slice the chicken into strips and assemble your bowls by layering roasted sweet potatoes and sliced chicken, drizzling with more barbecue sauce, and adding fresh cilantro if desired.
