  • 1 lb large shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 2 bell peppers, sliced (any color)
  • 3 green onions, chopped
  • ½ cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Rice: Cook jasmine rice according to package instructions.
  2. Make the Sauce: In a bowl, whisk together mayonnaise, Sriracha, and honey until smooth; adjust spice level as desired.
  3. Cook the Shrimp: Heat olive oil in a skillet over medium heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque.
  4. Stir-Fry Vegetables: Remove shrimp from the skillet and add bell peppers and green onions. Stir-fry for about 5 minutes until tender but crisp.
  5. Combine: Return shrimp to skillet with vegetables; drizzle half of the bang bang sauce over them and toss gently.
  6. Assemble: Serve rice in bowls topped with shrimp mixture and drizzle with remaining sauce. Garnish with extra green onions.
