- 6 large eggs
- 1 cup shredded cheddar cheese

Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Slice each croissant in half horizontally and optionally toast them lightly.
- In a bowl, whisk together eggs, salt, pepper, and garlic powder until well combined.
- Scramble the egg mixture in a skillet over medium heat until fluffy but not fully set. Add cooked bacon or ham and spinach before removing from heat.
- Assemble the sandwiches by layering cheese on the bottom half of each croissant, followed by the egg mixture and more cheese. Cap with the other half of the croissant.
