  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 small corn or flour tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup fresh salsa
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1 avocado, sliced
  • 2 tbsp taco seasoning

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with taco seasoning on both sides and place them in the baking dish; cover with aluminum foil.
  3. Bake for 25-30 minutes until cooked through; shred chicken with two forks.
  4. Mix shredded chicken with black beans and additional taco seasoning.
  5. Warm tortillas slightly to make them pliable; spoon the chicken mixture into each tortilla.
  6. Top with shredded cheese, fresh salsa, and avocado slices. Roll tightly.
