  • 8 oz penne or rigatoni pasta
  • 2 cups Brussels sprouts (halved)
  • 2 cups butternut squash (cubed)
  • 2 tbsp olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Chop butternut squash and slice Brussels sprouts in half.
  2. In a large skillet over medium heat, cook sausage until browned (5-7 minutes). Break into smaller pieces while cooking.
  3. Add butternut squash and Brussels sprouts to the skillet. Drizzle with olive oil, season with salt and pepper, and stir well.
  4. Spread mixture evenly on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  5. Meanwhile, boil salted water in a pot. Cook pasta according to package instructions until al dente (8-10 minutes).
  6. Drain pasta and add it to the skillet with sausage and veggies. Sprinkle with Parmesan cheese and mix well.
