- 1 whole scotch bonnet pepper (adjust to taste)
- 2 medium sweet onions, thickly sliced
- 4 cloves garlic, minced
- 2 sprigs fresh thyme
- 4 cups low-sodium beef broth
- 2 tbsp brown sugar (dark preferred)
- 2 medium carrots, chopped
- 6 whole pimento (allspice) berries
- Juice of 1 lime
- 1/4 cup low-sodium soy sauce
- 1/4 cup ketchup
- 2 tbsp vegetable oil
- Freshly cracked black pepper to taste
Instructions
- Rinse and pat dry oxtail. Season generously with salt and black pepper.
- In a large pot, heat vegetable oil over medium-high heat. Sear oxtail until golden brown on all sides. Remove and set aside.
- In the same pot, add onions and garlic; sauté for 3–5 minutes until translucent.
- Stir in diced scotch bonnet pepper, thyme, and allspice; cook for an additional minute.
- Pour in beef broth, soy sauce, ketchup, lime juice, and brown sugar; bring to a gentle simmer.
- Return oxtail to the pot and add chopped carrots. Cover and simmer on low for 2–3 hours until meat is tender.
- Taste and adjust seasoning before serving.
