- 1 cup sharp cheddar cheese, grated
- 6 tbsp ice-cold water
- 4 cups Granny Smith or Honeycrisp apples, peeled and sliced
- ¾ cup granulated sugar
- 2 tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp lemon juice
Instructions
- In a large bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in grated cheddar cheese.
- Gradually add ice-cold water, one tablespoon at a time, mixing until dough forms. Be careful not to overwork it.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- While the dough chills, prepare the apple filling by tossing apple slices with sugar, cinnamon, nutmeg, and lemon juice in a separate bowl.
- Once chilled, divide the dough into two portions. Roll out each portion on a floured surface to about ⅛ inch thick.
- Place one rolled-out dough into a pie pan, fill with the apple mixture, then cover with the second rolled-out piece. Cut slits for steam to escape.
- Preheat your oven to 425°F (220°C) and bake for 45-50 minutes until golden brown and bubbly.
