  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 cup sharp cheddar cheese, grated
  • 6 tbsp ice-cold water
  • 4 cups Granny Smith or Honeycrisp apples, peeled and sliced
  • ¾ cup granulated sugar
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice

Instructions

  1. In a large bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in grated cheddar cheese.
  2. Gradually add ice-cold water, one tablespoon at a time, mixing until dough forms. Be careful not to overwork it.
  3. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  4. While the dough chills, prepare the apple filling by tossing apple slices with sugar, cinnamon, nutmeg, and lemon juice in a separate bowl.
  5. Once chilled, divide the dough into two portions. Roll out each portion on a floured surface to about ⅛ inch thick.
  6. Place one rolled-out dough into a pie pan, fill with the apple mixture, then cover with the second rolled-out piece. Cut slits for steam to escape.
  7. Preheat your oven to 425°F (220°C) and bake for 45-50 minutes until golden brown and bubbly.
