  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1/2 cup brown sugar (for topping)
  • 1/2 cup oats (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine melted butter, eggs, milk, and diced apples until blended.
  4. Gradually fold the wet ingredients into the dry mixture until just combined; avoid over-mixing.
  5. Spoon batter into muffin tins until two-thirds full.
  6. For the crumb topping, mix brown sugar, oats (if using), flour, and cinnamon until crumbly. Sprinkle over muffins.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
