Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
- In another bowl, cream the softened butter until light and fluffy. Beat in the eggs one at a time until combined.
- Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the diced apples.
- Drop tablespoonfuls of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until edges are golden but centers are slightly underbaked.
- Allow cookies to cool on the baking sheet for five minutes before transferring them to wire racks.
